
Italian Style Summer Squash
A delicious blend of summer squash, tomatoes, and onions with an Italian seasoning blend.
Ingredients
- 2 TBSP of Southern Farm Italian Dip Mix
- 3lbs of Summer Squash, any variety and combination
- 1 TBSP of olive oil
- 1/2 Vidalia onion, thinly sliced
- 2 TBSP of salted butter, cut into thin pads
- 10-15 cherry tomatoes
- 1 tsp of lemon juice
- Grated parmesan, to taste (optional)
- Black Pepper, to taste
Instructions
1. In a large skillet, add olive oil, cubed squash, and onion.
2. Place pads of butter around the skillet and turn eye to medium heat. Using a spatula, stir ingredients until squash is coated in butter and oil. Sprinkle the 2 TBSP of Southern Farm Italian Dip mix and pepper while stirring.
3. When squash is almost done, prick the cherry tomatoes with a fork and add them to the skillet, along with the lemon juice. Cook until tomatoes are done and squash is fork tender.
4. Turn the eye off and stir in parmesan cheese, if using. This is to taste, so how much you use is at your discretion.
