Cheesy Italian Tomato Stuffed Chicken

Ingredients

  • 1 TBSP Southern Farm Italian Dip Mix
  • 2 boneless skinless chicken breasts
  • 1/4 cup shredded parmesan cheese
  • 1/4 cup shredded mozzarella cheese
  • 1/4 cup sundried tomatoes (in oil)
  • 2 TBSP salted butter, softened

Instructions

  1. Preheat oven to 450 degrees Fahrenheit.
  2. Line a baking sheet with parchment paper and place chicken breasts on it.
  3. In a bowl, combine parmesan cheese, mozzarella cheese, sun dried tomatoes, and butter. Mixture should be paste-like.
  4. Pour some oil from the sun-dried tomatoes in a separate, small bowl.
  5. Cut a pocket into each chicken breast from the side, ensuring not to cut completely through, and stuff each breast with the cheese, tomato, butter mixture.
  6. Using a basting brush, brush the reserved oil onto both sides of each chicken breast, then rub the Italian dip mix onto both sides of each breast. It is important to use the dip mix sparingly, as it very potent.
  7. Cook the chicken breasts for 30 minutes, or until the internal temp reaches 165 degrees Fahrenheit.
